Low-Fat Sugar-Free Lemon Cake




This lemon cake is only 120 calories per slice and made with lemon juice, zest, and sugar-free sweetener. It is tart and refreshing, and is the perfect way to satisfy your sweet tooth without all the guilt.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup sugar-free sweetener
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup vegetable oil
  • 1 egg

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sweetener.
  3. In a small bowl, whisk together the lemon juice, lemon zest, oil, and egg.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely before frosting.

Frosting:

  • 1 cup sugar-free whipped cream
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest

Instructions:

  1. In a medium bowl, whisk together the whipped cream, lemon juice, and lemon zest until smooth.
  2. Frost the cooled cake and enjoy!

  • For a fun twist, add 1/2 cup of chopped walnuts or raisins to the batter.
  • To make a dairy-free frosting, use vegan whipped cream.
  • To make a gluten-free cake, use gluten-free flour.
